Welcome to 52 Weeks of Soup! This is a blog for the love of soup, because I wholeheartedly agree with Master Chef Louis P. DeGouy in his quote above. Soup is, shall we say, comfort food at its finest.
First of all, a disclaimer: I am not trained in the culinary arts, and do not profess prowess in the kitchen! All of my recipes come from somewhere else, for which I will assign credit where credit is due.

I started the new year with soup as well. During the holidays my mother would make Potato Chowder and serve it with grilled cheese sandwiches. It is still one of my favorite meals. I hope you enjoy it too.

3 Large Potatoes
1 cup onions, sliced or dices
2 3/4 cups water
2 tsp. salt
1/4 tsp pepper
1 1/4 cup evaporated (canned)milk
2 tsp. parsley, snipped fresh or dried
dash paprika
Cook potatoes and onions in water until tender. Do not drain. Mash thoroughly or put through seive (I use blender). Add salt and pepper. Heat through on low heat and add canned milk, parsley and paprika. When the milk is added it is easy to scortch, so be careful. Makes 6 servings.
